Mungo beans (Vigna radiata) belong to the family of legumes, which are a unique source of protein and fiber. Its ancestors originated in India, where it is particularly abundant. The plant grows from 30 cm to 1 metre.

In Europe, especially popular are its sprouts, which are crunchy and have a fresh taste. You can sprout the beans yourself and use them to make many raw dishes.

Use

Recommended Use: Rinse the beans under cold running water. Remove all dirt. Place a cup of beans in a pot and cover with three cups of water and bring to a boil. Reduce the heat and cook until the beans are tender, about 20-30 minutes. Drain and the beans are ready to use.
