Apricot oil - a culinary specialty with a high content of linoleic acid (Omega 6).

Apricot oil is extracted from the seeds of safflower. It is a plant with bright yellow, orange or red flowers. The dried flowers are used as a substitute for saffron, as they have a similar appearance to saffron and also impart a subtle yellow colour to dishes.

The yellow oil has a delicate nutty scent and a golden yellow colour. It has a neutral taste or does not alter the taste of the food. A particularly large proportion of this oil is polyunsaturated fatty acids. In cooking it is used both for cold food preparation (e.g. salad dressings) and for cooked food, because it tolerates high temperatures well. It has a high smoke point.

It is also used in cosmetics because it softens dry and rough skin and, through use, is beneficial to the skin because it improves its texture.
