Amaranthus - an increasingly popular food with many preparation options

Amaranthus or Amaranthus tricolor is only briefly known here, but for ancient Native American peoples more than 6,000 years ago, it represented one of the most important foods in their diet. It was also used by the Aztecs as part of their religious rituals.

It is classified as a grain, although it is not actually a grain at all, but the seed of a plant that bears the same name. It is classified as a cereal because it is used in a similar way in the diet.

Amaranthus is now increasingly popular especially among people who cannot consume gluten, making it a suitable replacement for wheat, spelt, rye and other gluten grains.

It can be prepared similarly to millet porridge - in risotto, salad or as a stopper for soup. It is also often used as an additive in various desserts, granola bars, cereal bars, smoothies and other sweet dishes, and can also be made into pupcakes.

Amaranthus can be roasted, cooked or simply added as an ingredient to other dishes. You can also use it as a breakfast porridge by adding it to water and bringing to the boil in a saucepan, reducing the heat and allowing it to infuse for 20 minutes until the water is absorbed. Serve warm. You can add fruit, nuts, cinnamon and sweetener.
